This process gives a very unique flavour and characteristics due to the control done throughout the fermentation process, resulting in a high-quality coffee with sweet pastry, cherry and red currant flavour. This coffee offers complexity, and leans on the fruit side.
Flavour profile
The lot purchased by Keen Coffee was processed with Esteban’s very special technique. The beans were fermented anaerobically in a stainless steel tank. This process gives a very unique flavour and characteristics due to the control done throughout the fermentation process, resulting in a high-quality coffee that works wonderfully as a pairing to Maria Benes’ lot. With the sweet pastry, cherry and red currant flavour, this coffee offers the same complexity, but leans a little heavier on the fruit side. Yum!
