El Barejon Estate
This lot comes from the El Barejon estate, a small 2-hectare plot run by producer Elver Rioja Tarillo and his family. The farm is located at 1,900 meters above sea level and is planted with caturra and bourbon. It is becoming increasingly clear that climate change and fluctuating temperatures are causing problems for plots at this altitude. Droughts are becoming more frequent, so one of the key ways to help mitigate climate risks has been the installation of shade trees around growing areas, as well as the construction of effective irrigation and dispersal systems. of fertilizers to maintain soil health.

About the process
After the harvest months from June to October, the cherry harvest rests before being pulped and rests again for 24 hours. It is then washed and dried for a period of about 20 days before being prepared for storage. Once the coffee is ready, it is taken to the warehouse in Jaén where its quality is evaluated. At this stage a price is agreed for the coffee depending on its perceived cup score. Prices are set according to the quality of the lot and Falcon (our importer) intends to pay 30% above the local price, since this quality bonus will have a great impact on the livelihood of the farmer and his family. Finally, the coffee is transported to a plant called Café Selva Norte SAC and checked for defects before being bagged and moved to the coast for shipment.
